I am wondering if anyone has any experience or ideas for composting here. (We're not in the city, so we do have some green space.) I hate to see all of that wonderful fruit and vegetable waste go into the trast.
In the States, we just dug a hole in the backyard and buried it, but here I'm worried about rats and cockroaches and other pests.
Any ideas or experience with this here?

Hey El, how's it going! Just google 'home made outdoor composting bin plans' and you should get quite a few plans. The plans that are shown with supports (legs) that raise the composting bin off the ground are best for deterring pests. Lining the interior of the bin with preferably black plastic (but any will do) will keep heat in and speed up the process, and hopefully pests out. Make sure to have a lid on your bin to completely cover the bin opening. Keep secure with a fastening device (wire will do) to keep it shut. Hope this helps.

You're gonna need some 'night crawlers' - worms to throw in the mix also. Wet (soak) a grassy area with a hose (by your house of course) in the evening before sunset and after dark the will come up to the surface to breath. Use flash lites cause they will not come up until it is dark. If your lucky and they do come up in Bahia, the boys will giggle themselves silly trying to catch em.

There is a man that lives near Praia Do Forte (50 ks NE of Salvador) that makes and sells
compost. I don't know who he is yet, my friend will hook me up when I return in novembro.
I have a sitio in this region and I will be making a large garden. I'm not sure how he makes
this compost or if he uses worms but I will find out and would be happy to pass any info
along.

In New Orleans there are lots of rats and roaches, but they don't exist because of the compost or mess with it. The roaches are composters too, and plenty of yard cats deal with the rodents. For many years I used a trashcan with the bottom cut out, stuck into a foot deep hole in the ground. I think the earthworms found it on their own. My friend had a big, wooden box in her basement (of her raised house, no underground basements there!). It was a worm composter, and she used red worms. It was a totally closed system. I do remember that she couldn't give them everything and still had to throw some organic garbage out. The worms all died when she was evacuated for Katrina. I wish I could compost here in Itabuna, but there is no space whatsoever. I do hate throwing all that good future soil away.
